I have been putting this dish on the back burner for years thinking it was hard to make, not so.
Shopping list: English muffins, soft tofu, choice of vegan cuts(we went with the bacon as it was flavorful than the ham). Directions: Make the hollandaise sauce first, recipe to follow below. Heat the hollandaise in a sauce pan until just warm, if the sauce gets too thick just add water. Grill or toast the muffins then grill the vegan cuts. Using a well rounded spoon, scoop out the soft tofu forming the "egg" then poach in hot water until warm. Assemble all your ingredients and top it off it with your golden glaze of the veganized hollandaise sauce :) Enjoy! *Tips* Add grilled veggies of your choice onto the benedict then top it off your hollandaise sauce. Put all ingredients into a blender and start slow speed to crushing the cashew to bit then blast off to high speed until sauce is creamy smooth. Hawaii invented the classic beloved "Poke". coconut veggie curry Everyone thinks Japanese, or maybe an Italian cuisine are my favorite dishes, nope! It's Indian! Not knowing how to cook this lovely delicious dish, I did many take outs at a local favorite Indian restaurant, well.... when I got too lazy to cook. For the love of this dish, I pursued and got right to work in crafting my own Indian dishes. Here is this super simple recipe below folks, enjoy! Oh BTW, our website just had a makeover. Yay!

Featuring Beyond Meat's ChickenIt's been a while since my last post gang. Let's get the party started! I have been waiting for their product to arrive to Hawaii. Well months later my nearby local supermarket started carrying Beyond Meat, yay! We took a crack it and made some amazing dishes with it, chicken long rice soup, chicken jook(rice porridge), kalua cabbage(a local favorite), stir-frys, and this, this amazing mock chicken salad sandwich. Long before becoming a vegan, I never really ate red meat as it upsets my tummy. I enjoyed a lighter fare of fish and fowls, now, no more. There are three different choices of the Beyond Chicken Strips. Grilled, Lightly Seasoned and our most favorite the Southwest Style Strips. It's seasoned with lime juice, paprika, cumin. No plain Jane chicken here! Beyond Meat is serious about creating a REAL sustainable, tasty affordable food for everyone. I made a Chipotle Chili using Beyond Meat's Beef Crumbles and Field Roast's Chipotle Sausage along with my secret chili sauce that I will be sharing with you very soon. Meat eater's were blown away when they found out it was made from 100% vegan ingredients. Look below gang! A simple recipe for all! A Deli quality sandwich! Enjoy!
Directions: Sear the chicken slices in medium high heat until cooked through. Place on a large plate to cool off. Once cooled off, cut strips into mini cubes. Add all ingredients into a large mixing bowl and mix evenly until the nooch evenly coats into the mixture. I ran out of sandwich breads but the burger buns worked well too :) ***Tip*** Add curry powder, chopped walnuts, and raisins for an awesome Chicken Curry Salad Sandwich! New Job, New Menu!Aloha! I have landed a new job in April as Executive Chef for another restaurant and have been asked to do a vegan menu! The demand for vegan, vegetarian and allergen free foods are becoming popular here in Hawaii. I am here at the right time, right place, fully knowledge in this gastromany field. As much as I know now, I still have much to learn about vegan cuisines. Luckily I have my partner and vegan crime Lexy to help me out :) We have twisted the everyday non vegan menu to a stratosphere level only a hell bent vegan like us could create. No eggs, no dairy, 100% guilt free goody! The last time I had any decent vegan baked good was from our local health food store. In my opinion, the best vegan baked goods... Sweet Pea's in PDX, the scones, the croissant, oh so yummy! Not much going on here in Honolulu so I decided to start baking. Oh yes, the fear of baking. I can cook up all kinds of dishes but baking, that's a mountain to climb, a chore. "Fear not, stick to the science of baking and find the pleasures of baking as an art form!"
Honestly, I'm not a fan of cupcakes, cakes and sweet desserts. So why make cupcakes? The answer, I want to be a well rounded vegan chef, and to provide well rounded meals for my clients. After countless experimenting, I came up with this chocolate cupcake recipe. My test panel: Neighbors, friends, coworkers and my partner, Lexy. They all loved it! A 5 Star Dining Experience at HomeLast year's dinner was challenging as a newly vegan but this year, I'm cooking it and rocking it first class! Not bothering to make a boring salad or even a dessert! Get right into the heart of awesomeness :) This was my first crack at crafting a fine dine VEGAN dinner. I went with a romantic French and Italian theme. Was it good? It was sublime. We enjoyed cooking it and most of all, eating it! Prepped the day before to save time on this lovely day to just relax and enjoy each other's company. Lounge the day away with some good espresso and a vegan cafe take out or take away. It's good to re.....lax at home, where the heart is <3 Potato Leek Soup: Creamy, smooth, light and very hearty. Veggie Roulade: Grilled Eggplant, Zucchini, Red Peppers, Daiya Mozzarella Cheese and drizzled with a Balsamic Reduction Sauce. Here's the lovely Italian and French dish, the "Tofu Ricotta Cheese Ravioli" stuffed with Spinach and Crimini Mushrooms, topped with Blanc Buerre Sauce and Homemade Pesto, well, it's ALL homemade, from scratch, with love ;)
