Prep/cook time: 30 minutes.
- 1 can of coconut milk
- 3 1/2 cups frozen veggies(broccoli, cauliflower, carrots, peas) pick your favorites!
- 1 tsp salt
- 1/2 tsp garam masala
- 1 pinch of turmeric powder
- 3-4 pieces of curry leaves
- 1/4 tsp mustard seeds(optional)
- Add all the ingredients except the garam masala into a medium stock pot and bring to a boil then simmer at medium heat.
- Add the garam masala and stir and simmer, reduce to thicken as desired and at more salt as needed.
