Simple Potato Mac Salad
3 cups uncooked pasta your choice (rotini, macaroni, fusilli)
8 medium red potatoes ¼ inch diced
¼ cup finely diced carrots
¼ cup finely diced red onions
1 cup finely diced celery
1 cup vegan mayo
4 teaspoons granulated garlic
2 tablespoon Dijon mustard
Salt and pepper to taste
Top with paprika
Optional (shown in picture):
For a much more refreshing potato salad, top it off with some diced tomato, Japanese cucumber, avocado, and sliced black olives. Add some peas and diced apples too!

- Add the red potatoes in medium stock pot and fill with cold water covering the potatoes just above three inches. Bring the pot to a boil then reduce to medium high heat for 15-20 minutes or until potatoes are just cooked through. Do not over cook otherwise, you get mashed potatoes. Drain in colander and let it cool.
- Fill water (3/4) way up in a medium stock pot and bring it to a boil. Add the pasta and cook for 11 minutes until Al dente. Drain in colander and let it cool.
- Put potatoes and mac in fridge to chill, then prep veggies and set aside.
- Add all your ingredients into a large mixing bowl. With a large spoon or silicon spatula, folding in the ingredients evenly will reduce breaking the potatoes to bits. Top it off with Paprika. Enjoy!
