No eggs, no dairy, 100% guilt free goody!
The last time I had any decent vegan baked good was from our local health food store. In my opinion, the best vegan baked goods... Sweet Pea's in PDX, the scones, the croissant, oh so yummy! Not much going on here in Honolulu so I decided to start baking. Oh yes, the fear of baking. I can cook up all kinds of dishes but baking, that's a mountain to climb, a chore. "Fear not, stick to the science of baking and find the pleasures of baking as an art form!"
Honestly, I'm not a fan of cupcakes, cakes and sweet desserts. So why make cupcakes? The answer, I want to be a well rounded vegan chef, and to provide well rounded meals for my clients. After countless experimenting, I came up with this chocolate cupcake recipe. My test panel: Neighbors, friends, coworkers and my partner, Lexy. They all loved it! Sweet on the outside, moist and fluffy on the inside, kinda like me. Huh? I meant the cupcakes.
